Soya Chunks - “The Pepper mutton style”


Soya Chunks



Ingredients :

Soya chunks
2 cups
Onion
1 no
Tomatoes
1 no
Ginger Garlic Paste
2 spoons
Mustard
1 spoon
Curry leaves
As needed
Chili powder - Optional
1 spoon
Oil
3 to 4 spoons
Salt
To taste

Note: Boil water in a vessel and put the soya chunks, half a spoon of salt and cook for about 5 mins in high flame. Then take if off the flame and leave it aside for ten mins. After it cools drain off the excess water. See to that its cold enough that you can use ur hands to stain off the water the soya has absorbed. If the water is not removed the dish would be tasteless.
For cooking 2 cups of soya use about  5 to 6 cups of water.

For Dry masala Grinding :
Coconut Grating
1 spoon
Cumin seeds/ jeeragam
1 spoon
Pepper pods
1 spoon
Coriander seeds
2 spoon
Red chilies
3 to 4
Curry leaves
As needed

In a frying pan, Roast the ingredients for the dry masala “separately” . Each of them can be roasted for say about 2 mins ( in low flame )and keep aside for to cool. Curry leaves can be added with the coconut grating and roasted. After this is cool Grind it to a coarse powder.

Preparation Method :
1.       In a Pan heat the oil . Add mustard seed and wait till it pops.
2.       Add Onions cut into medium size cubes and fry till slight brown. I normally add curry leave after adding the onion for it to stay green.
3.       Add ginger garlic paste and cook till the smell goes. Say 2 mins.
4.       Add cut tomatoes. Finely chopped  or medium sized. Cook till its raw smell is gone  . I normally mash as it cooks.
5.       Add the spoon of Chili powder. Allow to cook. Reduce the flame so that it does not “theenju fy” :P Rolf I guess that would be easy for u to understand.
6.       Add about half a cup of water for the gravy to cook, allow till the oil separates from the tomatoes and chili powder gravy.
7.       Now add the soya chunks. Fry for two mins.
8.       Add the Dry masala to the soya. Add necessary salt. Remember u have already added some salt to the soya. So careful with the amount added now.
9.       If necessary add half a cup of water for the soya to absorb the masala . Fry till all the water is gone.
10.   Now serve and eatttttttttttt!!!!!!!!!!!!!!! 

Note: This same method will taste awesome wen done using Mutton , Praw and Chicken. For mutton and Chicken you need to get them pressure cooked with the right amount of water..Praw can be directly added and fried
